There’s a couple of great perks which can help you maximize your Stamina. In the heavy armor skill tree, you’ll want to get the Conditioning perk, which removes the heavy armor penalty on Stamina when sprinting.

The Nightingale armor rewarded during the Thieves Guild quest line increases your maximum Stamina by 40 points. To get the best version of this armor set, make sure not to complete the quest before reaching level 32.

Finally, there’s a Daedric artifact known as the Ring of Namira which adds an extra 50 points into your Stamina pool. To receive it, make sure to complete The Taste of Death quest in Markarth and side with Eola.
